I’ll be…

….taking a short vacation overseas with my sister. I’ll definitely share  the details when I get back next week. As I write this, although it’ll be like 18 hours before I depart, I’ve already started missing the kids! As excited as I am about going away for this vacation and have some me-time, I’m reluctantly leaving them behind. Hubs and I have been prepping the kids about my trip. Ashley’s fine with me leaving and she understands the whole thing. She knows that I won’t be around for a couple of days and that she’ll just have to make do with her own thumb and without Mommy’s hair for a few days. Now as for the Lil Taukeh - we’ll see. He claims that he’ll be ok with a nod and a grunt of approval…but we’ll see :) What can I say? Both the kids are mommy’s boy AND girl!

These are some snippets of our conversation with the kids …

Hubs : Mommy will be going to … on Thursday night for a few days ok?

Aidan : Mm! (and nods his head)

Ashley : Ok…

Hubs : So at night, you won’t be able to play with mommy’s hair.

Me : Aidan, mommy won’t be around. You take cheh-cheh’s hair ok?

Aidan :Mm (nods his head)

Me : Ashley? You let Ti-ti play with your hair ok?

Ashley : Ok

Me : Ashley, are you going to miss mommy when mommy is away?

Ashley : Yes. I will miss you very much! I love you so much you know….

*heart melts*

Oven Baked Chips with Rosemary

Ok…so yea..I have to admit that I’ve been having  cooking sprees these past couple of weeks. I mean..hey….theoretically, if you have a recipe in front of you, and if you can read instructions, then you can cook right? LOL!

This time, I decided to make Oven-Baked Chips with Rosemary because I LOVE all things potatoes! I love chips, oven-baked whole potatoes, potato rosti etc. I used Jamie Oliver’s recipe as a guideline and improvised it abit. Also, home cooked oven-baked chips are supposed to be healthier compared to the chips you get outside.

Ingredients

Potatoes - cut into large chips or whatever size you’d like them to be.

1 bulb of garlic (I lovvvve Garlic!)

Rosemary

Salt

Black pepper

Potato Wedge Sprinkes

Directions

1. Preheat oven at 230C

2. Cut the potatoes into chips

 

2. Heat up some olive oil, smash some garlic and put the chips in. Toss the chips to coat with the oil and add some black pepper and rosemary. This takes about 5 mins.

3. Place the chips on a baking tray and bake it for 20 mins.

4. Once the chips are baked to your satisfaction, toss some salt and potato wedge spinkles them to taste and voila.

Note –> This was my first attempt in making these oven baked chips. I expected the potatoe chips to turn out nice and firm and crispy but unfortunately it turned out to be limp! I googled about this and apparently, to make nice firm oven-baked chips, you should  place only 1 layer of chips on the baking tray instead of dumping all the chips on top of one another on the baking tray to bake. I will test this out the next time but flavour-wise - I love it!

With all this cooking sprees that I am in, I try to make it as healthy as possible e.g. use of olive oil and organic food stuff and speaking of health, it’s about time we review our health plan with bcbsnc.

merdeka!

(20 Aug 09) - The kindy that Ashley attends had a Merdeka Day celebration at school today. Parents were supposed to be involved in the celebration initially but due to the H1N1 virus outbreak, the school decided to celebrate it amongst students and teachers instead. I thought that was a good move. Better to be safe than sorry. Anyway, the kids had to dress up in a Malaysian costume and Ashley decided that she wanted to wear a Baju Kurung because it’s long and she reckons she looks like a princess. This is the first Baju Kurung I got for her which was rather reasonably priced for a kiddy baju -  RM30 from Jaya Jusco.

When I picked her up from school, she was holding on to a lil Malaysian Flag.  She then told  me in a matter-of-fact voice that her teacher is a Chindian. She also added that although she (Ashley) is a chinese, she was wearing a Malay baju. So I’m glad that the school is teaching the kids about the different cultures in Malaysia.

On another note, my lil taukeh is down with fever, flu and cough :( In view of the H1N1 outbreak, I quickly brought him to the paed to get examined and medicated  since Aidan is categorized as in the high risk group and has had bronchiolitis before. Get well soon Lil Taukeh!

Honey Baked Chicken Wings

My next attempt at cooking was to make Honey Baked Chicken Wings. After googling for the recipe, I decided on this recipe. I modified the recipe a bit to suit my liking.

Ingredients:

8 Chicken wings

Salt

Pepper

2 tablespoons of oil

Chilli Sauce

1/2 cup of honey

Choppped garlic. I LOVE garlic so I used about 1/2 - 3/4 clove of garlic

 

Directions :

1. Season chicken with salt, pepper, garlic and oil for a minimum of 30 minutes. (the longer the better I suppose)

2. Preheat the oven at 200C for 15-20mins

3. Mix the chilli sauce with honey and pour the mixture on top of the chicken wings.

4. Bake for 1 hour. I like the chicken wings to be baked till the skin is golden brown. If the sauce starts to caramelize, reduce the heat to say 180C.

This recipe is good for 4 people (2 wings per person)

Verdict?
Pass. :)

jump jump jump!

On Saturday evening, while both Hubs and I were getting ready to go out for dinner and movie, the kids were happily jumping on the bed as though they were jumping on a trampolin.

Hubs : Stop jumping on the bed!

The kids continued to jump…

Me : STOP! Jumping on the bed or else one of you is going to get hurt!

The kids continued to jump on the bed

Hubs : If you dont stop jumping on the bed, we will leave you two at home and Mommy and I are going to go out alone.

The kids continued to jump on the bed….

and the next thing we knew? we heard a loud THUD! followed by the kids letting out a loud cry!

Hubs turned just in time to see the both of them diving at each other, head first! Aidan’s forehead knocked into Ashley’s first eye and her eye area immediately swelled up and turned to black and blue almost instantaneouly! While Aidan’s hardy forehead was barely bruised, Ashley’s eye lid  was puffed up and she had an extra large black and blue eye bag under her right eye! We immediately laid an ice pack on her eye area to reduce the swelling by boy oh boy! It must have hurt tremendously - similar to getting a punch in the eye and I feel sorry for Ashley having to endure this.

Today, Ashley went to school with a slightly swollen and bruised eye. *sigh*

Hopefully the kids will learn their lesson this time!!

My dad used to complain that when he comes over to KL, he feels imprisoned in our home because he’s not familiar with the roads in KL (he and my mom are very outgoing back home) and don’t know how to get around. Now, he won’t have any lame excuses so say that he is couped up at home cause he finally got himself a Garmin GPS! Thanks to Taufu-Fa’s grandpa, he helped my dad to buy it from UK and loaded the necessary stuff onto the Garmin GPS and my dad is good to go!

I am very very amazed at how super stars are able to lose their pregnancy weight and get back into their pre -pregnancy weight in 1-2 months. I mean if they can do it, we, normal people can do it tooright? I am sure not ALL of them go for a nip and tuck but apat from their exercise regime, I am sure some of them could be good candidates to give apidexin reviews, don’t you think so?

Many of us who are have stable incomes do take things for granted. We get a paycheck every month, we can buy whatever we please (within our means) and do whatever that we please. But have you stopped to think how financially stable you’d be when you retire? How much would one need to sustain an acceptable standard of living to last us till  we die? And if (touch wood), you were to fall ill, is your social security disability sufficient to prevent you to think twice to seek for medical treatment? I think it’s important that it should be reviewed every other year just to keep a check and balance that we are covered sufficiently. Are you covered?

At the back of my head, I always wanted to move to Australia since a lot of my friends have migrated to Australia and have shared that quality of life is so much better as compared to living in Malaysia.  I reckon it’d be an advantage for us and the kids in terms of their education. But the thought of moving our stuff abroad sends chills down my spine. I reckon we may have to look for long distance moving companies to help us move our stuff over if we intend to move abroad. However, the hubs is hesitant about moving abroad. Let’s see how it goes.

>our house needs a facelift<

We’ve been living in our house for 6 years now and I think it is high time that we give our house a facelift. First of all, I would like to change the tiles in our bathrooms. They are the original tiles which came with the house when we first bought it from the developer and let’s just say that they don’t look so hot. While scouting around for tiles, I was kinda surprised that there is such a thing as metal tiles. Honestly, the first sound of ‘metal tiles’ it makes me not want to explore what metal tiles are about but when I had a look at them, I couldn’t resist them!
